Liquor Tax Law standardizes ‘tokutei meishu’ (sake with designated names)
into eight categories due to ingredients and processes of production.
This site currently introduces three kinds of sake: ‘junmai dai ginjo’, ‘junmai ginjo’ and ‘junmai shu’.
Among the ‘tokutei meishu’ standardized by Liquor Tax Law,
a sake is entitled ‘junmai daiginjo shu’ when it is produced from rice with less than 50% of rice milling rate,
using koji and water and has a specific scent called ginjo flavor, as well as a good shine.
