The Onda Sake brewery was founded in 1875 (Meiji year 8) in the idyllic countryside of Muikaichi-cho, south of Nagaoka city, with vast spread of rice fields around. Norio Onda is the 5<sup>th</sup> generation brewer of this brewery who have always strived to ‘Nurture the taste of rice’ through their brewing techniques. Onda san and his staff plant the brewer’s rice in spring, harvest it in autumn and make sake with the same rice in winter. In other words, the brewery staff oversees every step right from rice cultivation to brewing. For the brewing liquor, they use the ‘Ipponjime’ variety of rice which is rare even in Japan, and gives the sake its characteristic ‘umami of rice’.
